It's the season of asparagus abundance, and we simply can't resist the allure of this marvellous health food. Asparagus comes packed with antioxidants, serves as a natural diuretic, and is a champion for gut health as well as boasting an impressive array of vitamins K, A, and folic acid.
This delightful recipe is perfect for a light summer lunch or to dazzle your guests at your next braai (barbecue)!
Ingredients
- A couple of slices of sourdough bread
- Extra virgin olive oil
- 1 large bunch asparagus, ends trimmed
- 30 grams raw sesame seeds
- 1 teaspoon of nigella seeds
- Zest of 1 lemon
- 2 cloves garlic
- Himalayan salt and black pepper
- 5 large cloves of garlic
For the garlicy yogurt
- 150ml Greek yogurt or coconut yoghurt for a vegan option
- 30 ml extra virgin olive oil
- 5 peeled cloves of garlic
Instructions
- Preheat the oven to 220 degrees Celsius.
- In a baking dish, toss 50ml of olive oil, trimmed asparagus, sesame seeds, lemon zest, salt, and black pepper. Wrap the garlic cloves in baking foil, adding them to the tray. Transfer the dish to the oven and roast for 20-25 minutes, or until the asparagus is lightly charred. Once done, remove the asparagus from the baking dish. Wait a few minutes for the food to cool.
- Mash the garlic with the back of a fork and stir through the yoghurt with a pinch of salt. Then spread onto a serving plate.
- Arrange the roasted asparagus over the garlicy yoghurt and garnish with extra lemon zest, sesame seeds and nigella seeds.
Serve at room temperature and enjoy with toasted sourdough drizzled with olive oil!
